Savory Focaccia Custard
This delicious dish is perfect for having company over for brunch. It has a lemon basil tone that can be adjusted for a roasted onion garlic bread or to an sun dried tomato and pesto.
ingredients
- 1 large loaf of focaccia bread
- 2 T olive oil
- 1 t lemon juice
- 3 eggs
- 1/4 C chopped basil
- 1/4 C Parmesan (optional)
- 1/4 T salt
- 1/2 t pepper
- 1 C milk or soy milk

Preheat the oven to 350°

Tear out an even well in the bread, leaving a 1“ rim and base. Chop the remaining bread into 1” pieces. Brush the inside of the focaccia with olive oil + lemon juice. Toast in the oven for 10 minutes.

Whisk the eggs in a large bowl until fluffy. Add the remaining ingredients and whisk lightly. Stir in the bread.

Pour back into the toasted bottom, return to the oven and bake until set - apx 35-40 minutes.

For a fancy buffet brunch, lay down rows of asparagus to roast on top before going into the oven. Allow to set 10 minutes before slicing. Serve chilled or rewarm in a 250° oven.
