Summer Cous Cous Salad
ingredients
- 2 cups cooked couscous
- 5 green onions, chopped
- 2 medium tomatoes, chopped
- 1 cup cucumber, chopped
- 1/2 cup garbanzo beans
- 1 cup parsley, chopped
- 1/2 cup olive oil
- 1/3 cup lemon juice
- 2 cloves galric, minced
- 1 tsp dijon mustard
- 1 tsp coriander , ground
- 1 tsp salt
- 1 tsp pepper
- 1/2 cup feta cheese, optional
directions
Mix all solid ingredients together and toss with dressing. Refrigerate for 1 hour. As an option add feta cheese.
