Arroz con Queso (Beans & Rice)
Quick, make ahead, crock-pot, black beans & rice dish!
ingredients
- 1 can 16 oz whole tomatoes,mashed
- 1 can 16 oz Mex style black beans
- 1 1/2 C uncooked long-grain converted rice
- 1 large onion, chopped
- 1 C cottage cheese
- 2 cans Rotel
- 2 tbsp veg oil
- 3 cloves garlic
- 2 C grated Monterey Jack cheese
directions
Lightly grease Crock-Pot. Mix all ingredients except cheese in a large bowl. Pour into Crock-Pot. Cover & cook on low for 6+ hrs. Just before serving, sprinkle with grated cheese.
