Chicken with Pasta, Asparagus, and Tomatoes
This is very easy and very tasty.
ingredients
- 4 oz. linguine
- 2 TBS red wine or water
- 2 TBS tomato paste
- 1 TBSP sugar
- 1 tsp salt
- 1 tsp dried basil, crushed
- 1 cup fresh or frozen, cut-up asparagus spears
- 1 cup sliced fresh mushrooms
- 1 TBS cooking oil
- 2-4 boneless, skinless chicken breasts cut up in 1/2 inch pieces
- 2 garlic cloves minced
- 1 medium tomato, chopped
- 1/4 cup sliced black olives
- 1 TBS chopped parsley
- Grated parmesan cheese to taste

Cook linguine according to package directions; drain and keep warm. Meanwhile, combine red wine, tomato paste, sugar, salt, and basil; set aside.

In a large skillet over medium heat, cook asparagus and mushrooms in oil about 1 1/2 minutes or till vegetables are crisp-tender; remove. Add chicken

pieces and garlic to skillet. Cook about 3min. or till chicken is done. Stir in tomato mixture, vegetables, tomato, and olives to the skillet. Cook and stir

for 1 to 2 minutes or till mixture is heated through. To serve, toss chicken mixture with linguine; top with parsley and Parmesan cheese.

Serve with garlic bread and a salad. Delicioso!
