- 1/2 TSP GROUND CORIANDER
- 1/2 TSP DRIED OREGANO
- 1/2 TSP SEA SALT, PLUS MORE TO TASTE
- FRESHLY GROUND PEPPER TO TASTE
- 6 GARLIC CLOVES, MINCED
- 1 1/2 TBSP OLIVE OIL
- 1/3 A RIPE PAPAYA, PEELED, SEEDED AND CUT INTO FINE JULIENNE
- 1 SCALLIONS, CUT INTO FINE JULIENNE
- SPLASH OF FRESH LIME JUICE
- FOR THE BURRITOS:
- 1 LARGE RIPE TOMATO, CUT UP INTO 1/2" CUBES
- 1 SMALL CUCUMBER, CUT 1/2" DICE
- 1 SMALL AVOCADO, CUT 1/2" DICE
- 1 SERRANO CHILI, SEEDED, MINCED
- 2 TBSP FRESH CHOPPED CILANTRO
- 2 TBSP FRESH LIME JUICE
- 1 TBSP MAYONNAISE
- SALT AND PEPPER TO TASTE
- 4 SIX-INCH FLOUR TORTILLAS

IN A SMALL BOWL COMBINE CHILI POWDER, CORIANDER, OREGANO AND 1/2 TSP SALT. SPRINKLE SALMON WITH SALT AND PEPPER. RUB THE GARLIC ONTO THE FLESH SIDE OF THE SALMON, THEN RUB THE CHILI POWDER MIXTURE OVER THE GARLIC. SET ASIDE FOR 30 MINUTES.

HEAT THE GRILL OR STOVE TOP TO MEDIUM HIGH. DRIZZLE OIL ON THE FISH AND PLACE SALMON FLESH SIDE DOWN ON THE GRILL OR IN THE PAN. COOK 3 MINUTES BEING CAREFUL NOT TO BURN THE CHILE RUB. TURN, CONTINUE TO PAN COOK (OR GRILL) UNTIL COOKED THROUGH, ABOUT 4 MINUTES.

PLACE FISH ON TOP OF THE BLACK BEAN AND CORN FIESTA. GARNISH WITH PAPAYA MIXTURE AND SERVE IMMEDIATELY WITH THE VEGETABLE BURRITOS.

FOR THE BURRITOS: COMBINE ALL THE INGREDIENTS IN A MEDIUM BOWL. SEASON WITH SALT AND PEPPER. DIVIDE THE MIXTURE AMONG THE FOUR TORTILLAS; ROLL UP. CUT EACH IN HALF AND SERVE WITH THE SALMON AND THE BEAN-CORN SALAD.
