Carrot Ginger Soup

ingredients

  • 6 tbsp Butter
  • 1 Large Onion
  • 1/4 cup fresh Ginger Root (chopped)
  • 3 Garlic Cloves
  • 7 cups Chicken stock
  • 1 cup Dry White Wine
  • 1 1/2 lbs Carrots (peeled)
  • 2 tbsp Lemon juice
  • 1 pinch Curry powder
  • salt & pepper to taste

    1. Saute the ginger, onion and garlic in butter in a large pot.

    2. Add the stock, white wine and carrots then bring to a boil for about 45 mins.

  • 3

    3. Add lemon juice, curry powder and salt and pepper.

  • 4

    4. Puree and Garnish
