Carrot Ginger Soup
ingredients
- 6 tbsp Butter
- 1 Large Onion
- 1/4 cup fresh Ginger Root (chopped)
- 3 Garlic Cloves
- 7 cups Chicken stock
- 1 cup Dry White Wine
- 1 1/2 lbs Carrots (peeled)
- 2 tbsp Lemon juice
- 1 pinch Curry powder
- salt & pepper to taste

1. Saute the ginger, onion and garlic in butter in a large pot.

2. Add the stock, white wine and carrots then bring to a boil for about 45 mins.

3. Add lemon juice, curry powder and salt and pepper.

4. Puree and Garnish
