cajun chorizo succotash
ingredients
- 1/2 lbs smoked chorizo sausage
- 1 med onion, chopped
- 1/2 cup cooked lima beans
- 3 tbsp. bacon fat
- 2 cups fresh sliced okra
- 2 cups fresh cut off the cob corn
- 3 cups tomatoes peeled and chopped
- 1 tsp sugar
- 1 tsp chili powder
- 1 bay leaf
- 1 whole thai chillie
- salt and fresh cracked pepper
directions

1. saute onion and sausage in bacon fat

2. add okra, cook 5 min
- 3
3. Add remaining ingredients

4. stir well Cover and simmer 15 min until corn is fully cooked
- 5
5. remove bay leaf and chillie

This side dish is an excellent acccompaniment to any Cajun or Creolé entreé
