ingredients

  • 1/2 lbs smoked chorizo sausage
  • 1 med onion, chopped
  • 1/2 cup cooked lima beans
  • 3 tbsp. bacon fat
  • 2 cups fresh sliced okra
  • 2 cups fresh cut off the cob corn
  • 3 cups tomatoes peeled and chopped
  • 1 tsp sugar
  • 1 tsp chili powder
  • 1 bay leaf
  • 1 whole thai chillie
  • salt and fresh cracked pepper

    1. saute onion and sausage in bacon fat

    2. add okra, cook 5 min

    3. Add remaining ingredients

    4. stir well Cover and simmer 15 min until corn is fully cooked

  • 5

    5. remove bay leaf and chillie

This side dish is an excellent acccompaniment to any Cajun or Creolé entreé
