Cajun Chicken Pasta

ingredients

  • 1 Chicken breast, sliced
  • 1 link fresh Chorizo or other spicy sausage, uncased, chopped
  • 1 medium onion, sliced
  • 1 clove garlic, chopped
  • 1/2 stalk celery, chopped
  • 1 tsp olive oil
  • 1 Tbsp flour
  • 12 oz fat free half and half, milk can substitute
  • 2 Tbsp Cajun seasoning, more as desired
  • 1 Tbsp mixed seasoning, tarragon, Italian,
  • 1 head broccoli florets, steamed
  • 1 small tomato, chopped
  • 12 oz penne, cooked al dente

directions

Saute celery and onion in oil 3 minutes till translucent with a pinch of sugar and water to caramelize, add chicken and sausage till cooked. Add garlic and saute one minute. Sprinkle with flour to make roux. Lower heat to medium and add half and half and lower heat to low simmer. Add seasoning along with any herbs desired. Cook 5 minutes to remove flour taste. Add cooked pasta and broccoli and tomato and toss. Sprinkle with grated cheese if desired.
