Fonduta Gamberi
ingredients
- 2 c. half and half
- 2 Tbsp. dry white wine
- 3 Tbsp. butter
- 1 shallot, finely chopped
- 2 Tbsp. flour
- 4 c. rough chopped spinach
- 1 c. chopped artichoke hearts
- 8 lg. shrimp, chopped
- 1/8 tsp. cayenne
- 1/8 tsp. pepper
- 1/2 c. shredded fontina cheese

1. Combine half and half, clam juice and white wine.

2. Separately melt butter.

3. Saute shallots in butter. Add flour and cook 2-3 minutes.

4. Add heated half and half all at once, stirring.

5. Add psinach, artichoke, shrimp, cayenne and pepper and boil, reduce and simmer 3 minutes while stirring.

6. Remove from heat and stir in cheese.
