Green Beans with Mushrooms

ingredients
- 1 lb. Green Beans, trimmed
- 4 strips thick-sliced bacon, diced
- 1/2 lb. Button Mushrooms, quartered
- 1/2 cup Minced Shallots
- 2 tsp. Sugar
- 1/4 Cup White Wine Vinegar
- Salt and Pepper to taste

Blanch beans in a pot of boiling salted water, 3 minutes. Drain and plunge beans into ice water to stop cooking. Drain well and set aside.

Saute bacon in large skillet over medium-high heat. Add mushrooms, shallots and sugar; cook until mushrooms and shallots begin to brown, 5 minutes. Deglaze with vinegar, scraping bottom of the pan. Add beans and cook until heated through. Serve Immediately.
