Breakfast Casserole- Low Carb!
This is a healthier version of the standard egg casserole. Veggies and Cottage/ Swiss cheese!
- 6 Eggs
- 1 Cup Creamed or small curd cottage cheese
- 1 1/2 Cups shredded swiss cheese
- 6 stalks asparagus
- 1 Cup chopped mushrooms
- 1 small onion, chopped
- 2 tsp butter
- 1 tsp each of thyme & marjoram
- salt & pepper
