This is a healthier version of the standard egg casserole. Veggies and Cottage/ Swiss cheese!

ingredients

  • 6 Eggs
  • 1 Cup Creamed or small curd cottage cheese
  • 1 1/2 Cups shredded swiss cheese
  • 6 stalks asparagus
  • 1 Cup chopped mushrooms
  • 1 small onion, chopped
  • 2 tsp butter
  • 1 tsp each of thyme & marjoram
  • salt & pepper
