Tammy's Pork Satay
This recipe blends peanut butter, soy sauce and curry together in the marinade and the dipping sauce. Serve it with hot rice and a lettuce and citrus salad.
ingredients
Pork and Marinade- 1/4 c. low sodium soy sauce
- 1/4 c. low fat, low sodium creamy peanut butter
- 2 tsp brown sugar (1 tsp Splenda mix)
- 2 tsp curry powder
- 2 Tbsp lemon juice
- 1/2 tsp. crushed red pepper
- 1 clove garlic, minced or pressed
- 1 1/2 lbs. cubed pork tenderloin
- 1 Tbsp brown sugar (or 1/2 Splenda mix)
- 2 Tbsp peanut butter (lowfat, low sodium)
- 1/2 tsp crushed red pepper
- 1 clove garlic minced or pressed
- 1/2 cup reduced sodium soy sauce

Dipping Sauce
1. Combine 1 Tbsp. brown sugar, 2 Tbsp peanut butter, 1/2 tsp. crushed red pepper, 1 clove garlic, 1/2 cup soy sauce pour through strainer into serving dish or pitcher.

1. In a large bowl, blend soy sauce with peanut butter. Stir in brown sugar, curry powder, lemon juice, red pepper and garlic.

2. Add pork cubes, toss to coat sides evenly. Cover and chill for 4 hours or overnight.

3. Meanwhile, prepare dipping sauce. Cover and set aside.

4. Thread pork cubes on skewers. Broil 4 to 5 inches from flame for 15 - 20 minutes. Or until well done. Serve immediately with the dipping sauce.
notes
For 2 servings, halve the ingredients, for 8 servings, double the ingredients.
