Peggy Tobin's Pumpkin Chocolate Chip Cake
Moist and delicious. This can also be made with zucchini, banana, squash...use your imagination!
ingredients
- 4 eggs (or 1 c. Egg Beater’s)
- 1 c. vegetable oil
- 2 c. pumpkin puree
- 2 c. sugar (or Splenda)
- 3 c. flour
- 2 tsp. baking powder
- 2 tsp. baking soda
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 1/2 tsp. ground ginger
- 1 tsp. ground cloves
- 1/4 tsp. ground nutmeg
- 1 c. chocolate chips

1. Preheat oven to 350°F

2. Grease bottom of a 10" tube pan or bundt pan

3. Beat eggs

4. Add oil, pumpkin and mix.

5. Beat in sugar.

6. Sift dry ingredients together and add to pumpkin mixture. Mix until blended.

7. Fold in chocolate chips.

8. Bake 50-60 minutes.
