Galactic Scones
Stony Ridge chef Mary Catalano formulated this recipe for scones at the start of the cafe’s history. They are so good that one of our customers said that they are the best in the galaxy. Try substituting blueberries and lemon zest or strawberries and nutmeg for the raisins.
ingredients
- 2 Cup Flour
- 2 Tsp. Baking Powder
- 1/2 Tsp. Salt
- 1 Tbsp. Sugar
- 1/4 Lb. Butter
- 1 Cup Raisins
- 2 Eggs
- 1/2 Cup Heavy Cream

Mix flour, baking powder, salt and sugar in a bowl.

Cut in cold butter to the consistency of course cornmeal.

Toss in raisins.

In another bowl lightly combine eggs and cream.

Add to flour mix and incorporate all dry into the wet.

Turn onto floured board and shape into a flat 8" round. Cut the round in half and then each half into 3 pieces to make 6 triangle. Place on a baking sheet and sprinkle tops with sugar Bake at 350 degrees for 15-20 minutes until golden.
