CHICKEN FETTUCCINE
ingredients
- 3 Chicken breasts, skinned, boned & cubed
- 3 Tbsp butter - divided into 1 Tbsp & 2 Tbsp
- 2 cloves garlic, minced & divided in half
- 1 1/2 tsp Italian seasoning
- 1/2 lb fettuccine noodles
- 1/2 C onion, chopped
- 4 oz mushrooms
- 2 Tbsp flour & 2 tsp flour
- 1 1/2 tsp salt
- 1/2 tsp white pepper
- 1 1/2 C milk
- 1/2 C half and half
- 1/4 C & 2 Tbsp grated parmesan cheese
- 1/4 lb Co-Jack cheese, shredded
- 1 C diced Roma tomatoes
- 1/4 C sour cream

In skillet, cook, chicken, 1 Tbsp butter, 1/2 the garlic, and Italian seasoning until chicken is no longer pink. Remove from skillet and set aside.

Cook fettuccine according to package directions.

Meanwhile, in large skillet, melt 2 Tbsp butter. Saute onion, garlic, and mushrooms until onion in soft. Stir in flour, salt, pepper; cook 2 minutes.

Slowly add milk and half and half, stirring until smooth and creamy.

Add parmesan cheese and co-jack cheese, stirrin until melted. Stir in chicken, tomatoes, and sour cream. Serve over noodles.
