Party Fajitas

  • 2 lbs. flank steak, boneless chicken breasts or pork tenderloin
  • 1/2 C fresh lime juice
  • 1/4 C fresh orange juice
  • 1/2 C vegetable (or olive) oil
  • 1/4 C tequila (optional)
  • 4 lg. cloves garlic, peeled and minced
  • 1/2 tsp. salt or to taste
  • 1/4-1/2 tsp. cayenne pepper
  • 3 medium yellow onions, peeled and cut in half lengthwise

    Stir together lime juice, orange juice, oil, tequila, garlic, salt and cayenne pepper to make marinade. Pour into a heavy-duty, zip-top plastic bag or a shallow glass baking dish.

    Place beef, pork or chicken in marinade. Add onion halves. Seal bag tightly or cover dish with plastic wrap. Refrigerate at least 3 hours for pork and chicken or at least 12 hours for beef.

    To cook: Remove onions from marinade. Place onions, cut side down, on preheated hot grill. Brush with some of marinade. Cook for 2-3 minutes. Turn and basted again with marinade. Grill until browned and tender, but not falling apart-about 8-10 minutes total. Place to side of grill, away from direct heat, to keep warm.

    Add meat or chicken to hot grill. Grill beef desired doneness and chicken and pork just until done through. Do not overcook. Cook on first side until about two-thirds done. Turn only once.

    Keep warm until ready to slice. Slice across the grain into thin slices. Serve immediately with grilled onions ad other toppings such as sour cream, salsa and guacamole.
