Calhoun's Twice-Baked Potatoes
ingredients
- 7 lg. baked potatoes
- 1 stick butter, melted
- 1 C sour cream
- 1 (8 oz.) bottle ranch dressing (could use light)
- 8 oz. grated Cheddar Cheese
- 8 oz. bacon bits
- 1/2 C chopped green onion
- 1/2 tsp. salt
- 1/4 tsp. white pepper
- Topping:
- 2 cups cornflake crumbs
- 1/4 cup melted butter

Cut baked pototoes in half lengthwise and scoop out pulp. Place pulp and the 1 stick melted butter in food processor with blade attachment or in a mixing bowl with paddle attachment. Mix until pulp is smooth with only a few lumps.

Add remaining ingredients and mix until blended. Do not over mix.

Using a rubber spatula, empty the contents into a 9x13 inch casserole dish and spread evenly throughout.

Could also put back into potatoe skins.

Mix corn flakes and melted butter. Spread on top of casserol. Bake at 350 degrees for 20 minutes.

Uncover and cook an additional 5 minutes.
