Summer Garden Panini
ingredients
- 2 Tbsp. lemon juice
- 1 Tbsp. extra virgin olive oil
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 1 (6x12") loaf whole-wheat ciabatta, split, soft centers removed
- 4 red leaf lettuce leaves
- 1 yellow bell pepper, sliced
- 6 radishes, thinly sliced
- 1/2 small red onion, thinly sliced
- 1 small zucchini, thinly sliced
- 2 tomatoes, thinly sliced
- 6 oz. part-skim mozzarella cheese, thinly sliced
- 1 cup packed fresh basil leaves

To make the dressing, combine the lemon juice, oil, salt and pepper in a small bowl, beating with a whisk until blended. Brush the cut side of the top half of the bread with 1 Tbsp. of the dressing and set aside.

Layer the remaining bread with the lettuce, bell pepper and radishes and drizzle with another two tsp. of dressing. Layer with the onion and zucchini and drizzle with another 2 tsp. of dressing. Layer with the tomatoes and cheese and drizzle with the remaining dressing. Add the basil and cover with the reserved bread, cut side down, pressing it firmly.

With a serrated knife, cut the loaf crosswise into 6 pieces.
