I took a recipe from my Barcelona cookbook and tweaked it several times to make this crispy flat bread. You can personalize it by adding any toppings you want. The dough is very sticky, so you will want to have lots of flour on hand while kneading and placing in pan. I have used this recipe many times as an appetizer.

ingredients

  • 1 2/3 cups of wheat flour
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 1 tbsp. olive oil
  • 1 egg yolk
  • 3/4 cup warm water
  • You can also use prepared whole wheat dough
  • Here is a list of our Preferred Toppings
  • Pesto
  • Garlic
  • Proscuitto
  • Onions or Scallions
  • Portobello Mushrooms
  • Yellow & Red Peppers
  • Roasted Corn
  • Roasted Tomatoes
  • Shrimp
  • Roasted Chicken
  • Shaved Parmesan Cheese
  • Goat or Feta Cheese
  • Sausage or Chorizo
  • Fresh Herbs

    Preheat oven to 425. Mix flour, salt and baking powder. Add olive oil and egg yolk. Add warm water. Knead dough on floured surface. Form dough into ball and place in well oiled bowl. Cover with towel and leave for 30-60 minutes.

    Oil baking sheet (do not use non stick spray). Press dough into sheet (the dough will be very thin and stretchy). Lightly drizzle dough with olive oil. Add favorite toppings. Bake for approximately 20 minutes (though you need to keep a watchful eye since it can burn quickly).
