Fillets in Orange Sauce
Makes a pretty presentation with some color in the dark of winter. Nice served with string beans (haricots verte) or asparagus.
ingredients
- 1 lb fillets of lemon sole, flounder or red snapper divided into 4 equal pieces
- 1/4 c flour
- 1/2 t salt
- 1/2 t pepper
- 2 T butter
- 1 T finely shopped onion
- 3 T frozen orange juice from concentrate
- 1 T dry white wine
- 4 thin slices orange

Dry fish on paper towels.

Mix flour, S&P together and dip fish slices in seasoned flour to coat lightly.

Melt butter in a large skillet. Add onion and sauté over medium heat until they are soft but not browned.

Add fish fillets and cook until lightly browned, turning once, two to three minutes on each side.

Remove fish to a warm serving platter. Lower heat and add orange juice concentrate and wine. Stir to combine and heat through. Add orange slices.

Top each piece of fish with an orange slice & pour sauce over all.

Serve immediately.

Serve with Sauvignon Blanc or Chardonnay.
