Makes a pretty presentation with some color in the dark of winter. Nice served with string beans (haricots verte) or asparagus.

  • 1 lb fillets of lemon sole, flounder or red snapper divided into 4 equal pieces
  • 1/4 c flour
  • 1/2 t salt
  • 1/2 t pepper
  • 2 T butter
  • 1 T finely shopped onion
  • 3 T frozen orange juice from concentrate
  • 1 T dry white wine
  • 4 thin slices orange

directions

  • 1

    Dry fish on paper towels.

  • 2

Mix flour, S&P together and dip fish slices in seasoned flour to coat lightly.

  • 3

Melt butter in a large skillet. Add onion and sauté over medium heat until they are soft but not browned.

  • 4

Add fish fillets and cook until lightly browned, turning once, two to three minutes on each side.
