Checkerboard Cookies
ingredients
- 1 cup butter, softened
- 1/2 cup sugar
- 1 egg yolk
- 1 tablespoon grated orange peel
- 1 teaspoon vanilla
- 2 1/2 cups all-purpose flour
- 2 oz melted unsweetened chocolate

Preheat oven to 350°

In a large bowl beat together butter, sugar, egg yolk, orange peel and Vanilla until light and fluffy. Add flour beating until well blended. Divide dough into 2 equal portions. To 1st portion add 2 oz unsweetened chocolate, blending well. Leave 2nd half plain.

Shape chocolate into 4 logs; 15 in. long and 1/2 in. in diameter. Shape plain dough the same.

Place 1 chocolate log next to 1 plain log; then place a plain log on top of chocolate log and 1 chocolate log on top of plain log.

Press logs together lightly to form compact log. Repeat with remaining logs.

Cut each log in half for ease of handling. Wrap and refrigerate until firm, at least 2 hours.

Cut chilled dough into 1/4 in. slices. Place 1 in. apart on greased cookie sheet. Bake 8-10 min. or until plain dough is golden. Remove cookies to rack to cool.
