Frijoles Negros (Cuban black beans)

  • 2 15 oz. cans black beans or 2 cups cooked black beans
  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • 4 cloves garlic, minced
  • 3/4 cup vegetable broth
  • 1 t. cumin
  • 1/2 t. oregano
  • 1/2 t. salt
  • 1 T. red wine vinegar

    Saute the onion and pepper in a little oil. Add the garlic and saute a little. Introduce a little of the bean liquid until all previous ingredients are soft. Add 1 cup beans and mash with back of a fork. Add remaining beans with the remaining liquid. Add spices and simmer about 30 minutes until slightly thickened. Add the vinegar just before serving.

    Serve over a bed of rice seasoned with just lime.
