ingredients

  • 1 1/2 lbs. fish, e.g. cod, snapper, tilapia
  • 2 eggs
  • 1/2 cup flour
  • 1/4 cup corn meal
  • 1 tbsp garlic salt
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional)
  • ground pepper
  • 1 tablespoon vegetable oil

    Rinse fish in water. Pat dry. Cut into pieces that are two to four ounces in size.

    Beat eggs in small bowl.

    Combine floup, corn meal, garlic salt, paprika and cayenne pepper (optional) in medium bowl.

    Put first piece of fish in eggs and coat both sides. Take out of bowl and shake gently to get excess egg mixture off. Then coat with flour mixture on both sides. Shake gently to get any loose flour off. Set on a plate and repeat with remaining fish pieces.

    Place saute pan on medium-high heat. Add oil. Wait until hot (about 30 seconds). Saute fish filets in pan approximaately 4-6 minutes per side depending upon thickness.
