Cheese Pecan Wafers
There are so many versions of cheese wafers. This is just one. These are great to freeze and have for emergency hors d’oeuvres
ingredients
- 1 lb extra sharp white Cheddar cheese, grated
- 2 sticks unsalted butter, softened
- 2 c all purpose flour
- 1 c finely chopped pecans
- 1/8 t or more cayenne pepper
directions
Cream cheese and butter until mixed. Add the rest of the ingredients and mix thoroughly. Shape dough into rolls 1 inch in diameter using wax paper. Place in the freezer for 30 minutes or until firm. Preheat oven to 400° and place rack in the middle of the oven. Slice dough into 1/3" slices. Bake 10 - 15 minutes or until light brown on the bottom.
