Buttermilk Berry Muffins

Makes 10 to 12 muffins

ingredients

  • 2 cups Self Raising Flour
  • 1 to 2 tsp Cinnamon
  • 1/3 cup Sugar
  • 1/4 tsp Finely Grated Lemon Zest
  • 3/4 cup Buttermilk (cultured)
  • 2 Large Eggs
  • 1 tbsp Vegetable Oil
  • 1 1/2 cups Mixed Frozen bBerries (blueberries, raspberries, boysenberries etc)
  • Extra Cinnamon and Caster Sugar

Preheat oven to 180°C. Sieve flour and cinnamon into a large bowl, stir in sugar and lemon zest. Whisk eggs add with buttermilk and vegetable oil to dry ingredients gently fold in mixed berries. Spray muffin tins and spoon in mixture then dust with cinnamon and sugar. Bake for about 20 minutes. Cool slightly before removing from muffin tins.

notes

Replace: Buttermilk with 1/2 cup Sour Cream and 1/4 cup Milk
