Tori's Vegan Cupcakes
They’re cupcakes! And vegan! It’s basically like eating carrot sticks.
ingredients
Vanilla Style- 1 cup soymilk (s)
- 1 tsp apple cider vinegar (v)
- 1 1/4 cups flour (f)
- 2 tbsp cornstarch (c)
- 3/4 tsp baking powder (bP)
- 1/2 tsp bakig soda (bS)
- 1/4 tsp salt (NaCl)
- 1/3 cup canola oil (CO)
- 3/4 cup sugar (z)
- 2 tsp vanilla extract (Va)
- 1/4 tsp vanilla OR other extract (x)

- 4oz semisweet chocolate, chopped
- 2 tbsp maple syrup

Vanilla Style Preparation

oven=350 degrees fahrenheit, 176.6 degrees celsius, or 449.8 kelvins.

separate bowl-> s+v...whisk with fork for optimal curdleage

bowl 1 -> CO+z+Va+x+(s+v)

bowl 2 -> f+c+bP+bS+NaCl

mix until no lumps remain.

fill cupcake liners 2/3 of the way full.

bake for 20-22 minutes.
Chocolate Style Preparation

Ganache Preparation

microwave soymilk (approx 1 minuteish), add chocolate and syrup, mix, and nuke again until you can mix it easily and no lumps of chocolate remain.

now go put it on your cupcakes.

but wait until they are cool, otherwise it will be way too melty and gross.

i reccomend making the ganache as soon as you put the cupcakes in the oven, so the ganache will have time to settle and cool.
