Fool Proof Prime Rib Roast

ingredients

  • 1 Standing rib roast, at least 4 pounds and two ribs thick
  • salt and freshly ground black pepper to taste
  • ROASTING TIMETABLE
  • 4 to 5 pounds - 30 minutes
  • 6 pounds - 42 minutes
  • More than 6 pounds - additional 12 minutes per pound.

    Preheat oven to 500 degrees

    Beef must be at room temperature. Trim fat to a thin covering. Season well with salt and pepper. Roast uncovered, fat side down, for 30 minutes. Remove from oven, drain grease from roasting pan. Reduce temperature to 350 degrees, roast according to timetable.

    Remove roast from oven. Do not cover. Let stand for the same length of time roast was in oven. Roast may be reheated at 200 degrees before serving. Allow 1/2 lb. per serving.
