Rice Bake
ingredients
- 2 Cups Cooked Rice
- 1 1/2 Cups Diced Cooked Chicken
- 1 Can Corn, Drained
- 1 Can (14.5 ounces) Tomato Sauce
- 1-2 Tbsps Cumin
- 1 Tbsp Garlic Powder
- 1/2 Tsp Oregano
- 2-3 Tbsps Chili Powder
- 1/3 Cup Franks Red Hot Sauce
- 1 Tsp Ground Red Pepper
- 4 Tbsps Butter
- 4 Tbsps Flour
- 1 Cup Milk
- 1/2 Cup Chicken Broth
- Pepper
- Salt
- 1/2 - 1 Cup Cheese

1. In a large bowl combine: rice, chicken, corn, tomato sauce, cumin, garlic powder, oregano, chili powder, and hot pepper. Stir to blend.

2. In a saucepan, melt utter over med-low heat; stir in flour until well blended and bubbly.

3. Gradually stir in milk, chicken broth and salt and pepper. Cook, stirring consistently, until thickened and bubbly. Add Franks. Stir in the rice and chicken mixture. Taste and adjust seasoning.

4. Pour into a casserole pan, sprayed lightly with cooking spray. Bake at 350 F for 20-30 mins. If desired, sprinkle with cheese about 5-8 mins before dne.
