Puff Pastry Salmon w/ Pesto

Puff pastry stuffed with salmon fillets and delicious pesto. Perfect as an appetizer, or for a family dinner.

ingredients

  • 2 skinless/boneless salmon fillets
  • 1 box frozen puff pastry
  • Garlic powder
  • Onion powder
  • Pre-made pesto
  • Non-fat mayonnaise
  • 1 egg
  • Sesame seeds

directions

    1: Pre-heat oven to 400 degrees

    2: Defrost salmon and puff pastry.

  • 3

    3: Meanwhile, mix non-fat mayo with pre-made pesto.

    4: Lay out two sheets of puff pastry on counter, and spread pesto mixture down center of each sheet.

    5: Season with garlic powder and onion powder.

  • 6

    6: Slice large pieces of salmon fillet and place down center of each sheet.

  • 7

    7: Add more pesto mixture, garlic powder, and onion powder on top of salmon.

  • 8

    8: Fold closed each puff pastry sheet, sealing completely using wet fingers.

    9: Flip over bundle and place in a well-Pammed glass baking pan, seam-side down.

    10: Glaze top of each one with egg and sprinkle on sesame seeds.

    11: They are done when the puff pastry is golden brown and puffed.

You can also make these in individual puff pastry pockets and serve as an appetizer with a bowl of corn soup, or with mashed potatoes.
