Veggie Dumplings in curry
This is a dish from India.It is considered a real delicacy over there.It ceratinly tastes great with basmati(white rice) or Indian bread(Parathas) or Naan. You can alway make and save extras in the freezer for later. Thee veggie ball are dipped in onion and tomato gravvy.Recipe follows.
ingredients
veggie balls- 2 cups – finely grated zucchini
- 1 Cup – finely grated carrots
- 2 Cups –mashed potatoes
- 1 cup – finely grated cabbage
- 1 cup - finely chopped cilantro
- 1/2 cup - grated fresh ginger
- 2 Cups - Chic Pea Flour/Soy Flour
- 2 cups - oil to deep fry
- Salt for taste
- 1 large onion – finely chopped or grated
- 3-4 cloves - grated garlic

Mix all the grated veggies,flour and salt together until its well blend.

Heat up the wok with oil.When its enough hot,start dropping small balls of veggie in the oil.lower the heat of stove.Wait the balls to turn red and flip them over.Once done from both the sides,drain the oil and take them out and place them on a paper towel,so that extra oil can be soaked.
