Oatmeal Crispies
ingredients
- 1 cup shortening
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 3 cups quick-cooking oats
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon

In a large bowl, cream shortening and sugars. Add eggs one at a time, beating well after each addition. Beat in vanilla. Combine the oats, flour, baking soda, salt, nutmeg, and cinnamon. Gradually add to creamed mixture.

Drop by tablespoonfuls 2 inches apart onto ungreased baking sheets. Flatten with a fork. Bake at 350° for 10-12 minutes or until lightly browned. Move to wire racks to cool.
notes
For softer oatmeal cookies, add a few mashed, very ripe bananas to the recipe.
