Veggie Patty
This is a kind of snack in India. I love to cook, serve and share all the time. You can enjoy in different ways. One is: hot & fresh just with Ketchup or Chutney (recipe follows later) Second is: Just place it in your bun, bread or any kind of French roll or sandwich.
ingredients
- Prep Time: 30-45 minutes
- Ingredients:
- 1 large onion – finely chopped or grated
- 2 cups – finely grated zucchini
- 1 Cup – finely grated carrots
- 2 Cups –mashed potatoes
- 1 cup – finely grated cauliflower
- 1 cup – finely grated cabbage
- 1 cup - finely chopped cilantro
- 2tbspoons of oil
- 1 cup – bread crumbs
- Some Non-stick spray or oil
- Salt for taste

First take a 9 inch pan or any larger size pan. Set it on stove to warm up. Put some oil and let it heat up. Add onions and sauté it until its reddish. Keep medium heat adds carrots and cover it for few mins and let it soften. Add rest of veggies and continue sautéing till all water evaporates. Turn off the heat. Add mashed potatoes and salt and mix it all together.

Roll them over with bread crumbs.

Make small pancakes like and place them on griddle or flat pan on low or medium heat. Spray non-stick spray or oil (whatever you like). Once they are done, flip it over for other side until it turns red or crispy.

Place them on a plate and enjoy it your family
Chutney

1. 1 raw mango- peeled and cut in pieces

2. 2small pack of Cilantro
- 3
3. 1-2 green chilies (as per your tatse)

5. 1/2 cup plain yogurt
- 6
6. Pinch of cumin powder (if it’s available.)

Mix everything in blender. Add some water if you like flowing chutney. That’s it.

Your ready to eat and enjoy!!!!!
