Better-than-Basic Muffins

Makes 12-15 muffins
This is out of Martha Stewart’s Everyday Food magazine. It’s a basic muffin recipe to which you can add any variety of ingredients (see notes on add-ins at the bottom). We had my apple-version of these when you and Carrie visited Charlottesville in Fall, 2008.
ingredients
- 3/4 cup (1 1/2 sticks) unsalted butter, melted, plus more for pan
- 2 cups all-purpose flour (spooned and leveled), plus more for pan
- 2 large eggs
- 1/2 cup whole milk
- 1/2 teaspoon pure vanilla extract
- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- mix-ins (see variations, below)
- 2 tablespoons sanding sugar (optional)
