PFEFFERNUSSE
A European special treat!
ingredients
- 3 eggs
- 1 cup granulated sugar
- 3 cups flour
- 1/4 tsp. baking powder
- 1/4 tsp. salt
- 1/8 tsp. white pepper
- 1 tsp. cinnamon
- 1/8 tsp. cloves
- 1/2 cup chopped candied lemon peel
- 1/4 cup blanched almonds
- 1/2 cup powdered sugar
- 2 apple slices

Preheat oven to 350 degrees

Beat eggs and granulated sugar in a large bowl. Add flour, baking powder, salt, pepper, cinnamon, and cloves, and continue to beat until well mixed.

Wrap dough in wax paper and chill 1 hour.

Grease 2 large cookie sheets. Roll out dough on lightly floured surface until approx. 1/4“ thick. Cut out circles with 1” cookie cutter. Place on cookie sheets and bake for 15 mins., or until lightly browned. Cool on wire racks. When cool, shake cookies in powdered sugar until well coated.

Because cookies are very hard, place them in a tightly covered container with the apple slices, and allow to ripen for 2-3 weeks (they will soften).
