  • 2 eggs
  • 1 cup milk
  • 1 cup sifted flour
  • 1/2 tsp. salt
  • 1/2 tsp. ground black pepper
  • 1/4 cup beef drippings, heated

    Preheat oven to 450 degrees.

    Beat the eggs with a whisk until quite light, then gradually beat in the milk and flour. Season with salt and pepper.

    Place an 11x14x2 1/2 inch baking pan in the oven and let it get very hot. Remove pan and pour in drippings, then pour in batter. Put pan on center shelf of oven and bake for 10 mins., then reduce heat to 375 degrees and continue to bake until the pudding has risen and is puffed and brown. DO NOT open the oven door during the first 20 mins. of baking or the puddings will fall. Cut in squares and serve immediately.
