Mom Justan's Chicken Balls
Not what they sound like! These tasty “meatballs” are delicious smothered in onions, mushrooms and garlic. No spaghetti necessary. Good Passover recipe too.
ingredients
- 2 1/2 - 3 lbs chicken breasts
- 1/4 lb butter or margarine
- 3-4 medium onions
- 4 oz. (jarred) button mushrooms
- 3 med. eggs beaten
- 1 tsp. salt
- 1 tsp. garlic powder
- 1 packet of George Washington chicken flavored seasoning
- 1/4 cup matzoh meal

Melt butter in skillet and saute mushrooms and onions and season with half of the seasonings.

Chop up chicken (food processor if you want or use ground chicken). Add remaining seasoning to chicken and add eggs. Gradually add matzoh meal while mixing.

Roll into balls and drop into saute mixture. Cover and cook about 10 minutes. Remove and taste test...be sure chicken is cooked.
