Vodka Sauce

ingredients

  • 1/4 cup finely chopped onion
  • 2 tablespoons pure olive oil
  • 4 tablespoons unsalted butter
  • 1 teaspoon minced garlic
  • 1/4 cup vodka
  • 5 cups crushed tomatoes
  • 1 1/2 cups heavy cream
  • 1 teaspoon salt and 1 teaspoon pepper (5 pepper blend)
  • 1/3 cup parmesan cheese
  • 1 teaspoon chopped parsley

    In a large shallow skillet, heat the olive oil and butter and Sautee the onion and garlic until it is softened. Do not let it brown. Carefully add the vodka and let it reduce. Add the tomatoes, cream, and salt and simmer the sauce using a wire wish to bring the sauce together. Simmer until the sauce has thickened and easily coats a spoon. Toss in cheese and sauce the pasta. Garnish with parsley (Use flat Italian parsley).
