Grilled Lobster
ingredients
- 8 tablespoons (1 stick) butter
- 2 tablespoons chili powder
- 2 cloves garlic, chopped fine
- 4 lobster tails
directions
Heat the grill to medium-high. Mix the butter, chili powder and garlic in a small pot over low heat until melted and well blended. Reserve half of the butter mixture for serving and bring the rest to the grillside for basting. With a pair of really good kitchen shears, cut up through the middle of the shell toward the tail, but stop before the tail. Then, with a knife, cut down through the lobster to the bottom shell plate, but not through the plate. Pick up the tail in both hands and fold back the sides--like you’re opening a book, exposing all the lobster meat. Now brush the exposed lobster meat really well with the butter mixture and place, meat side down, on the grill for about 5 minutes, then turn and cook for another 4 to 5 minutes, or until fully cooked through, basting often with the butter mixture. Serve with the reserved butter mixture.
