Banana Protein Muffins
ingredients
- 12 Egg whites
- 2/3 Cup uncooked oatmeal
- 2/3 Cup high fiber cereal
- 2 Fresh bananas
- 6 Tablespoons low or no sugar jam
- Dash vanilla extract
- Cinnamon
- 1 Teaspoon baking soda
- 1 Teaspoon Baking powder
- 6 Packages SteviaPlus Fiber Packets or 8 to 12 drops SteviaClear Liquid Stevia
- Pam cooking spray
- 1 Ounce raw chopped pecans

Preheat over to 350 degrees.

In a blender mix everything but the cereal. Fold the cereal into the batter.

Line muffin tins with aluminum cupcake liners (this affects the consistency) and spray with Pam.

Pour the mixture evenly into the liners and top with chopped pecans. Bake for 30 minutes.

TIP: These freeze well, but be sure to let them cool before freezing.
