Mozzarella, Basil, Pesto, and Peperonata Panini

  • 4 ciabatta rolls
  • 3/4 cup basil pesto
  • 1 cup peperonata
  • 6 oz fresh mozzarella, sliced thin
  • salt
  • freshly ground black pepper

    Preheat panini grill

    Slice off domed top of ciabatta rolls, and save for something else. The rolss should be about 1 inch thick. Cut in half.

    Spread the top halves with basil pesto. Spread the bottom with peperonata. Lay the cheese over the peperonata in a single layer. Season with salt and pepper before covering.

    Grill the sandwiches for 4 minutes or until the bread is golden brown. Serve immediately.
