- 3 eggs - beaten
- 2 cups sugar
- 3/4 cup oil
- 3/4 cup buttermilk
- 2 tsp vanilla
- 2 cups flour
- 2 tsp cinnamon
- 2 tsp baking soda
- 1/2 tsp salt
- 2 cups carrots - grated
- 1 cup coconut - grated
- 1 cup nuts - chopped
- 1 small can crushed pineapple - drained

Preheat oven to 350 degrees.

Mix together first five ingredients. Sift together next four ingredients, add to the first mixture. Add next four ingredients and pour into a lightly greased 15x9x2 pan. Bake 55 minutes.

While cake bakes prepare icing.

ICING

1 cup sugar
- 3
1/2 cup buttermilk
- 4
1/4 tsp baking soda
- 5
2 tsp white corn syrup
- 6
1/2 cube margarine
- 7
Mix and boil 5 minutes. Remove from heat. Cool. Pour over cake as it comes from the oven.
