Sweet and Spicy Chicken Lo Mein
It can be prepared with turkey, steak, chicken, lamb or pork. Really delicious!
ingredients
- 3/4 lb whole wheat linguine or Chinese noodles
- 1 lb chicken thinly sliced
- 1/4 cup soy sauce
- 2 tbsp cornstarch
- 1 cup chicken stock or water
- 1/3 cup rice vinegar
- 2 tbsp rice wine
- 3 tbsp brown sugar
- 2 tbsp molasses
- 1 tbsp dark sesame oil
- 1 tbsp vegetable oil
- 1 tbsp chopped ginger
- 5 green onions
- 3 garlic cloves
- 1 tsp hot Asian chili paste
- 1 leek or small onion thinly sliced
- 1 carrot grated
- 1 sweet red pepper thinly sliced
- 1/4 lb snow peas sliced
- 1/4 cup chopped cilantro or parsley
directions
Cook linguine until tender but firm. Combine chicken with 1 tbsp soy sauce and 1 tbsp cornstarch. Combine stock, vinegar, rice wine, brown sugar, molasses, sesame oil, remaining soy sauce and cornstarch. Heat oil and cook chicken, add ginger, green onions, garlic and chili paste, stirfry for one minute. Add leek, carrot and red pepper, cook for 3 minutes. Stir up sauce and add to skillet, bring to a boil, add snow peas and noodles and heat thoroughly. Add cilantro.
