Top with gooey cheese or serve in a bread bowl and this dip is sure to be a hit at your next party!

ingredients

  • 1 tbsp. of butter
  • 1 cup of finely chopped onion
  • 2 garlic cloves, minced
  • 10 oz of chopped frozen spinach, drained and squeezed dry
  • 8 oz can of water chestnuts, chopped and drained
  • 14 oz can of artichoke hearts w/out oil, chopped
  • 8 oz of reduced fat cream cheese, softened
  • 8 oz of reduced fat sour cream
  • 1 cup of low-fat shredded cheddar cheese divided
  • 1 tsp of hot pepper sauce
  • 1/2 tsp salt
  • 1/4 tsp pepper

    Preheat oven to 350 degrees.

    Melt butter in a large non-stick skillet over medium heat. Saute onion and garlic for 5 minutes or until tender. Add spinach, water chestnuts and artichoke hearts and saute for 2 more minutes. Add cream cheese, sour cream, 1/2 the shredded cheese, pepper sauce, salt and pepper.

    Spoon into an 11x7 inch baking pan coated with cooking spray. Top with remaining cheese. Bake at 350 for 18 to 20 minutes or until its thoroughly heated. Serve with baked tortilla chips.
