Creole Catfish Sandwiches
ingredients
- 1 teaspoon cornstarch
- 2 teaspoons lemon juice
- 1 egg white
- 1/3 cup bread crumbs
- 3 tablespoons yellow cornmeal
- 1 teaspoon Creole seasoning
- 1/4 teaspoon black pepper
- 4-4 ounce frozen catfish fillets
- 2 tablspoons mayonnaise
- 2 teaspoons Creole mustard
- 4 hoagie style buns
- 4 lettuce leafs

1. Preheat oven to 450 degrees F. Preheat cookie sheet for 10 minutes before using.

2. Combine cornstarch, lemon juice, and egg white in bowl. In another bowl, combine bread crumbs, yellow cornmeal, Creole seasoning and pepper. Dip fish fillets in egg mixture then into bread crumb mixture. Place fish on preheated cookie sheet in a single layer.

3. Bake for 25 minutes. While fish bakes, combine mayonnaise and mustard. Spread mixture on one side of bun, place a lettuce leaf on bun and top with fish and then add top of bun.
