Oven Poached Salmon with Cucumber Sauce

ingredients

Salmon
  • Whole boned salmon, 6-8 pounds
  • 2 lemons, sliced
  • 2 onions, sliced
  • 1/2 whole peppercorns
  • 2 cups dry white wine
Cucumber Sauce
  • 1 cucumber, peeled and seeded
  • 2 Tablespoons of mayo
  • 1/2 cup sour cream
  • 1 Tablespoon fresh lemon juice
  • salt and ground white pepper to taste
  • dried dill weed

    Preheat oven to 350

  • 2

    In a large roasting pan, place a large piece of cheesecloth that extends over the edgeof the pan to provide handles to lift fish from the pan. Place whole fish on top of the cheesecloth and add lemon, onions and peppercorn. Pour wine over the fish.

    Cover and poach at 350 degrees for 45-60 minutes or until fish flakes easily with a fork. Serve warm or cold with Cucumber Sauce.

notes

This poaching method can also be used to paoch salmon steaks. Reduce recipe by 1/2 if paoching 4 steaks and cook for 15-20 minutes.
