Spanish Rice

My favorite dish my mom started making in my teen years was Spanish Rice. This is similar, only with more seasonings and spices.

  • 4 slices of bacon
  • 2 T bacon grease
  • 1/2 lb. ground beef
  • 1 med. onion, chopped
  • 1 med. green pepper, chopped
  • 2 c water
  • 1 8 oz. can tomato sauce
  • 1 c uncooked, long grain rice
  • 2 T Worcestershire sauce
  • 1/2 t chili powder
  • 1/2 t dried thyme
  • 1/4 t hot pepper sauce
  • 1/8 t cayenne pepper(optional)
  • black pepper to taste
  • 4 slices of cooked and crumbled bacon

    Fry bacon until crisp. Remove to paper towels and drain..Set aside. Drain grease from pan, reserving 2 T . Add reserved grease to pan and saute the onion and green pepper over medium heat until soft; add meat and cook until browned.(Drain any excess grease) Add remaining ingredients and bring to a boil. Reduce heat, cover and simmer on low until rice is tender, about 30 minutes.

    Top Spanish rice with crumbled bacon. Serve.


You can forget the bacon grease if you like and use 2T butter or margarine. If you think you would like it moister, use a 15 oz. can of sauce instead of the 8 oz. can.
