French Lasagna
ingredients
- 3 lb. skinless, boneless, chicken breasts poached in white wine
- 3 10 oz. packages frozen chopped spinach
- 3 c. Parmesan, Swiss, and Provolone cheese combined
- 1 c. onion, chopped
- 1 c. flour
- 2 c. chicken broth
- 1 c. milk
- 2/3 c. white wine
- 1 lb. lasagna noodles
- butter
- marinara sauce

Mix spinach with 2 T. butter. Mix cheeses together. Shred and cut chicken into bite-sized pieces.

Melt 6 T. butter in a pan. Sauté onions. Add flour and stir. In a separate pan, heat milk and broth. Add 2/3 of this mixture to the onion/flour mix. Add the wine, reserving 1 c. Beat with a whisk and cook for 5 minutes. Add the remaining liquid to thin.

Preheat oven to 350.

Oil a baking dish. Layer Lasagna, white sauce, spinach, cheese, chopped chicken, and marinara sauce. Repeat for second layer. Top the second layer with marinara sauce, white sauce and cheese.

Bake for 30 – 40 minutes until bubbling.
