Greek Rotini Salad
ingredients
- 2 cup macaroni uncooked
- 2 Tbsp lemon juice
- 1/2 cup olive oil or vegetable oil
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp oregano
- 1 clove of garlic (crushed)
- 2 tomatoes cut up
- 1 cucumber peeled & diced
- 1 cup thinly sliced green pepper
- 12 black olives
- 1 1/2 cup crumbled feta cheese
- 8 red radishes
- 1/4 cup green onion sliced (about 4)
- 2 Tbsp parsley (chopped fresh)

Cook macaroni, drain and cool.

Combine lemon juice, oil, pepper, oregano & garlic in a small bowl. Whip with a wire whisk until well blended & of a thick and creamy consistentcy. Chill.

Combine macaroni, tomatoes, cucumbers, green peppers, olives, feta cheese, radish, green onion & parsley in a bowl.

Pour dressing over salad and toss.
