White Bean and Turkey Chili
ingredients
- 1 Tablespoon olive oil
- 1 yellow onion, chopped
- 2 cloves of garlic, minced
- 2 teaspoons ground cumin, divided
- 1 lb ground turkey, cooked
- 3 cans of white beans, drained
- 1 Tablespoon chili powder
- 1 can corn
- 1 can diced tomatoes
- 1/2 teaspoons cayenne pepper
- 1/2 teaspoons salt
- 1/2 teaspoon black pepper

Heat olive oil over medium-high heat. Add onion and cook 3-4 minutes or until soft.

Lower heat to medium and add garlic and 1 teaspoon cumin. Stir 1 minute.

Add turkey, beans, and corn. Simmer, uncovered, 7-8 minutes, stirring occasionally.

Add tomatoes, chili powder, cayenne pepper, salt, pepper and remaining cumin.

Cook, stirring until heated thoroughly.

Serve with cheese, sour cream, and scallions.
