Crunchy Potato Casserole
ingredients
- Potatoes:
- 2 lbs frozen hash browns
- 1/2 cup chopped onion
- 1 tsp salt
- 1/4 tsp pepper
- 1 (10 oz) can cream of chicken soup
- 10 oz mild cheddar cheese, shredded
- 1/2 cup (1 stick) butter or margarine, melted
- 2 cups sour cream
- Topping:
- 2 cups crushed cornflakes
- 1/4 cup (1/2 stick) butter or margarine, melted

Preheat oven to 350*F

For the potatoes, combine potatoes, onion, salt, pepper, soup, cheese, butter and sour cream in a large bowl and mix well. Pat into a greased 9x13-inch baking dish and then bake, covered with foil, for 45 minutes

For the topping, mix the cornflakes and butter in a bowl. Spoon over the potato mixture and bake, uncovered, for 25 minutes
